This week, one of the produce items in our CSA boxes are fresh cucumbers! Cucumbers make a great addition to almost any salad, they’re refreshing when added to a pitcher of water (with a pinch of mint, trust us, you won’t regret it), and they make a great summer snack to munch on! Being a bunch of foodies though, we have to make things a little more adventurous…
Tzatziki is a staple of many Mediterranean/Middle Eastern dishes. It is a garlicky yogurt-based sauce with plenty of cucumber. It’s a quick and simple dish to make and goes great with gyros or even just with some pita bread. Once you get a taste of it, we’re sure you’ll find plenty of dishes to serve it with!
Grate the 2 cucumbers lengthwise, avoiding the seeds in the middle. Sprinkle with salt and drain in a strainer for about 20 minutes. After cucumbers drain, mix in with the rest of the ingredients and season to taste with sale and/or sugar!
