ULTIMATE SQUASH CASSEROLE
4 Cups cooked Yellow Squash, well salted and drained (about 4# raw)
1 small Onion, sliced (or ½ large Onion)
2 eggs, beaten
¼ teaspoon White Pepper
5 Tablespoons Butter, melted
½ Cup A.P. Flour
1 teaspoon Baking Powder
Combine all ingredients and pour into a 9 x 9 inch baking dish.
Bake at 350F for 35- 40 minutes
Top with 1/3 Cup toasted breadcrumbs or ½ Cup shredded cheese if desired!
SWEET SQUASH RELISH
10 Cups Yellow Squash, shredded
1 medium Yellow Onion, grated
2 medium Carrot, peeled and grated
2 Cups Cider Vinegar
2 Cups Sugar
2 teaspoons Mustard Seed
2 teaspoons Celery Seed
2 inch piece of Cinnamon stick
2 teaspoons Turmeric
2 teaspoons Pickling salt
Bring all ingredients to a boil and then reduce heat to a simmer. Cook for 10 minutes.
Allow to cool to room temperature before placing in a container in the refrigerator for up to 2 months.
Serve with hotdogs, sandwiches, grilled pork or a cheese platter.
