(Tagetes lucida) Used as a substitute for French tarragon. Often compared to licorice and anise. Leaves are best used raw or added at the end of cooking; goes well in fish and chicken dishes, soups, salads, pestos, and vinegars. In Mexico, leaves and flowers are used for tea. Can be used for dried flower arrangements. Does very well in hot climates.
